Marzipan

Photo not available yetThis makes a small amount of marzipan, scale up the recipe if you need more

1/4 egg
1/8 tsp almond essence
1/8 tablespoon lemon juice
30g caster sugar
30g icing sugar
55g ground almonds

Whisk the egg with the almond essence and lemon juice. Stir in the sugars and almonds. Knead the mixture with your hands until it forms a dough.

Leave in the fridge for a while before you use the marzipan.
