Sweet Dessert Pastry
Essential for some of my recipes. It always seems to crumble when I roll it out, but rolling it out and putting the pieces in the tin bit by bit and squishing the edges together works fine
170g plain flour
pinch of salt
85g dairy-free baking margarine
3 egg yolks
85g caster sugar
a few drops vanilla essence
Sift flour and salt into a mixing bowl. Add the margarine, cut it into small chunks, and rub it in with your fingers until the mixture resembles fine breadcrumbs. Make a well in the center of the mixture and add the yolks, sugar and vanilla essence. Mix in the flour mixture using a knife, then knead until smooth. Place in a plastic bag and chill for at least 30 minutes.
