Almond Cake
170g dairy-free baking margarine
200g caster sugar
4 eggs
85g flour
115g ground almonds
3 drops almond essence
Mix together the margarine and sugar until smooth. Slowly add the eggs and then the flour, almonds and almond essence. Mix well to make sure that there is enough air in the mixture. Pour into a greased cake tin and bake at 180°C for 35-40 minutes, or until a knife inserted into the cake comes out clean.
