Chocolate Orange Cake
Very very nice
4oz dairy-free baking margarine
4oz caster sugar
2 eggs
4oz self-raising flour
4 tsp cocoa powder
grated peel from 1 orange
2 dessertspoons orange juice
dairy-free plain chocolate (optional)
Mix together the margarine and sugar until smooth. Slowly add the eggs and then the flour. Mix well to make sure that there is enough air in the mixture. Mix in the cocoa powder, peel and juice.
Cook at 170°C until cooked and a knife inserted into the cake comes out clean. If you want to cover the cake, remove it from the tin when cool and place on a large flat tray or plate. Turn the cake upside down, or even slice off the top to make it flat, if you want it to look neat. Slowly melt some chocolate, in a bowl or on a plate, over a small pan of hot water. Spread the chocolate evenly over the top and sides of the cake, and allow to set.
This recipe only makes a small cake, to make a larger one use half again of all the ingredients and cook at 180°C.
