Ratatouille Gougere

Filling:
1 onion
a little olive oil
1 pepper
1 large aubergine
1 1/2 medium courgettes
1 large aubergine
1/2 tsp basil
salt and pepper
1/2 tin chopped tomatoes
1 clove garlic
Pastry:
5 1/4 fl oz soya milk
2 1/4 fl oz water
3 oz dairy-free baking margarine
3 3/4 oz strong white flour
3/4 tsp salt
3 eggs
3 tsp Dijon mustard
3/4 tsp bouillon powder
pinch cayenne pepper
First make the ratatouille filling. Fry the chopped onion in the olive oil for about 10 minutes. Add the chopped pepper, the courgettes chopped into 1 inch (2.5 cm) slices, and the aubergine cut into 1 inch (2.5 cm) cubes. Then add the basil, salt and pepper. Fry on a low heat for 30 minutes, covered.
Add the chopped tomatoes and cook for 15 minutes. Add the chopped garlic 5 minutes before the end.
While you are cooking the filling, begin making the pastry. Heat the soya milk and water in a small saucepan, then add the margarine. When the magarine has melted, stir in the flour and salt, stir over the heat until the mixture is smooth and sticks to itself instead of the pan. Allow to cool slightly, and I'll tell you the rest later.
