Coconut Cake
A very nice coconut cake. This cake is fairly simple to make.
6oz dairy-free baking margarine
6oz caster sugar
3 eggs
6oz self-raising flour
2oz dessicated coconut
3 dessertspoons soya milk
Mix together the margarine and sugar until smooth. Slowly add the eggs and then the flour. Mix well to make sure that there is enough air in the mixture. Finally add the coconut and soya milk. Pour into a greased cake tin and bake at 180°C for about 40 minutes, or until a knife inserted into the cake comes out clean.
