Pancakes
Too nice to just eat on pancake day
115g flour
1/4 teaspoon salt
2 eggs
285ml soya milk
dairy-free baking margarine to fry
toppings of your choice
Put the flour and salt into a mixing bowl and make a well in the centre. Add the eggs and some of the milk. Mix the liquid carefully, very gradually incorporating the flour so that there are no lumps. Add the rest of the milk slowly.
Heat a small amount of margarine in a frying pan. Pour in enough pancake mixture to cover the bottom of the pan, and fry until the bottom side of the pancake is beginning to turn brown. Turn the pancake over and cook the other side. Remove from pan. Repeat this process with the rest of the mixture.
Put whatever topping you like on the pancake, maybe sugar with lemon juice, or juice squeezed from an orange.
